Regardless the current forecast, the Autumnal Equinox blesses us with the official beginning of Fall on September 23. At 1:49 a.m. CDT, to be exact. While we may not yet be experiencing Autumn’s cooler temperatures, let’s not let it take us away from some seasonal changes in our menu planning and cooking – you can save the wardrobe changes until the thermometer makes that more reasonable.
Growing up, and maybe it was just a Southern thing, sweet potatoes were an integral part of Fall and Winter menus, particularly around holidays. Who can forget candied sweet potatoes – out of the can or freshly made; sweet potato casseroles, with or without the sweet addition of pineapple, but almost always topped with pecans (if not mixed in) and marshmallows, lightly toasted, for sure.
