INGREDIENTS
8 oz sharp cheddar cheese, grated
I stick butter, room temperature
1 cup all-purpose flour
Smalll pinch of salt
1 cup Rice Krispies
DIRECTIONS
Line two cookie sheets with parchment paper, and preheat your oven to 350°.
In a large bowl, using your hands (latex gloves recommended), thoroughly combine the grated cheese, butter, flour, and salt. It will come together in just a few minutes, forming a ball that’s easy to manage.
Flatten the ball a bit, pour on the Rice Krispies, and mix/squish to thoroughly incorporate the crisped rice.
Using a small cookie scoop, if you have it, or a teaspoon (not the measuring kind, but the kind in your silverware drawer) if you don’t, scoop out approximately 1/2 teaspoon of the dough.
Roll the dough in your hands, then flatten the ball and place on the lined cookie sheet.
Bake for 10-12 minutes. The longer you bake, the crisper they will be. You’ll find your ideal time.
Allow to cool and enjoy.
