We’ve all heard it said that few things – taxes, etc. – are certain in life. To whatever list you might have, you can safely add that if a recipe says ‘butter pecan’, yours truly is going to take the bait and give it a try. When I saw a Butter Pecan Cookie recipe by taffeykitchen.com pop up on my Instagram feed, it was game on!
Not only do these capture what you really like about butter pecan – butter and pecans, of course, with eggs and brown sugar – they are decidedly good, whether served warm (and soft in the middle) or cool (and a bit more crunchy). I was impatient, so they were still warm when I did my taste test. It’s a good thing I didn’t have vanilla ice cream on hand, or I’d still be making and eating butter pecan cookie ice cream sandwiches. My internist would not approve of that.
