For many, Brussels sprouts are an acquired taste, maybe even more so than broccoli. However, without doubt, both appear at or near the top of all lists as a recommended addition to your diet. Brussels sprouts seem to be the darling of drizzled and roasted veggies (with or without the addition of some balsamic vinegar or glaze); but sometimes variety demands a cut other than ‘half’.
Bring on the shaved Brussels sprouts. If you Google for recipes, you’ll find a blinding number. You’ll also find an amazing similarity in them, making it much easier to allow your own inspiration, taste, and talents to tell you how to use them.
With Brussels sprouts providing a healthy list of nutrients, along with fiber, I opted for poached eggs to add a protein boost. Well, eggs and a bit of crisp pancetta. It was a fun meal to make, and even more enjoyable to eat. Let me demonstrate.
SHAVED BRUSSELS SPROUTS
(with poached egg and pancetta)
(Before we get started, no amounts are given, as that will totally depend on how many servings you want, and how much of an impact you want any particular ingredient to have)
INGREDIENTS
Shaved Brussels sprouts (packaged, or do them yourself)
Pancetta
Diced onion
Eggs
Salt
Pepper
Red pepper flakes (optional)
DIRECTIONS
Put the pancetta in a pan over medium heat, allowing it to render until nicely browned.

Once it’s where you want it, remove the pancetta and put it in a bowl lined with a paper towel to drain. Don’t get rid of the rendered fat in the pan.

Reduce the heat to medium low, and add the onion to the rendered fat, allowing the onions to sauté until translucent.
Add the shaved Brussels sprouts, the salt and pepper, to the pan, stirring until combined with the onion, coated and glistening with the rendered fat, and turning a bright green.

Add the drained pancetta to the pan, stir to incorporate, then plate it. Top with a poached egg or eggs, season with more salt and pepper, if needed or desired, and garnish with a few red pepper flakes.

SUGGESTIONS
If poached eggs aren’t your protein of choice, leave them off and top the shave Brussels sprouts with grilled or poached salmon; or you might even try some sliced flank steak. So many choices, I know. What you do with the pancetta at this point is up to you.
A small portion, topped with sliced hard-boiled egg, or sliced avocado, or both (for that matter), will make a great side salad to a salmon or beef filet.
